A micro-market typically produces two to four times the sales per employee of a vending bank, because selection is wider and fresh food is possible. Vending still wins below roughly 50 employees or where floor space and sightlines make an open market impractical. Above 100 employees, a market almost always outperforms.
Where the revenue difference comes from
Two variables drive it: basket size and repeat visits. An open market lets someone take a sandwich, a drink, and a snack in one transaction, where a vending bank forces three separate purchases and usually loses two of them.
Fresh food is the other half. Entrees, salads, and protein boxes cannot be merchandised well behind glass, and those items carry the highest ticket in an unattended program.
The costs people forget
Shrink: an honest-system market runs roughly 1–3% shrink with camera coverage and account-based checkout. That is real, but it is smaller than the revenue lift over vending in almost every deployment we have seen.
Service labor: a market needs more frequent restocking than a vending bank because of fresh rotation. In an owned-and-operated model that cost sits with the operator, not the host.
Space and power: 100–300 square feet and a handful of dedicated circuits. Vending needs far less of both.
Break-even by headcount
Under 50 on site: a smart cooler or a hybrid cooler-plus-tower setup.
50–100: a compact market works if the site has steady daily attendance rather than a heavily hybrid schedule.
100+: a full self-checkout market, and usually a second cooler at a satellite break area.
